Overnight Fiesta Salad
Ingredients
- 1 15 12 oz can kidney beans drained
- 1 onion chopped
- 2 medium tomatoes chopped
- 12 c chopped celery
- 12 c chopped green pepper
- 12 c Thousand Island dressing
- 1 small head lettuce torn
- 1 c shredded cheese
- 3 boiled eggs chopped
- 1 c crushed corn chips
Directions
- Layer the beans onion tomatoes celery green pepper dressing lettuce cheese and eggs in large salad bowl
- Cover tightly
- Refrigerate several
- hours
- or
- overnight
- Top with corn chips
- Toss gently before serving
- Makes 8 servings
