Oyster Stuffing

Ingredients

  • 34 c chopped onion
  • 1 12 c chopped celery
  • 2 Tbsp butter or margarine
  • 9 c dry bread cubes
  • 1 tsp salt
  • 1 12 tsp crushed sage leaves
  • 1 tsp thyme leaves
  • 12 tsp pepper
  • 14 c chopped parsley
  • 2 8 oz cans standard oysters chopped
  • 2 eggs
  • 1 34 c oyster liquid and milk

Directions

  1. In large pan melt butter or margarine
  2. Cook and stir onion and celery until tender but not brown
  3. Add bread cubes seasonings and mix
  4. Stir in chopped oysters
  5. Beat eggs into oyster liquid and milk
  6. Add liquid gradually and toss lightly to evenly coat
  7. Makes enough stuffing for a 12 to 14-pound turkey
