Ozark Pumpkin Bread

Ingredients

  • 1 23 c sifted flour
  • 14 tsp baking powder
  • 1 tsp soda
  • 18 tsp salt
  • 12 tsp cinnamon
  • 12 tsp nutmeg
  • 13 c shortening
  • 1 13 c sugar
  • 12 tsp vanilla
  • 2 eggs
  • 1 c mashed canned or cooked pumpkin
  • 13 c sherry
  • 12 c chopped nuts

Directions

  1. Sift together flour baking powder soda salt cinnamon and nutmeg
  2. Cream together shortening sugar and vanilla
  3. Add eggs 1 at a time and beat well after each
  4. Stir in pumpkin
  5. Add dry ingredients alternately with sherry and blend well
  6. Stir in nuts Turn into well-greased 9 x 5-inch loaf pan
  7. Bake at 350 for 1 hour or until a cake tester inserted in center comes out clean Turn out on a wire rack to cool
  8. Wrap and refrigerate until ready to slice
  9. Makes 1 loaf
