Pacific Tamato Basil Pasta Salad
Ingredients
- 2 Tbsp caper
- 3 ripe tomatoes chopped finely
- 3 green onions thinly sliced
- 1 clove garlic minced
- 8 to 10 fresh basil leaves shredded
- 5 Tbsp extra virgin olive oil
- 1 Tbsp fresh lemon juice
- salt and pepper to taste
- 12 lb spiral shape pasta or other shapes
- shredded Parmesan cheese
Directions
- Rinse capers under cold running water and pat dry with paper towels
- Place in large salad bowl with the tomatoes green onion garlic and basil
- Combine lemon juice salt and pepper
- Add oil and stir until blended
- Fill large pan with salted water and bring to boil
- Add pasta and boil until cooked but still firm
- Drain and rinse under cold running water
- Add to salad bowl
- Pour the dressing over salad
- Toss well
- Serve with Parmesan cheese if desired
