Pakistani Chicken Curry

Ingredients

  • 4 boned chicken breasts
  • 3 cloves garlic
  • 6 Tbsp butter or vegetable shortening
  • 1 Tbsp ground coriander
  • 1 tsp ground cumin
  • salt to taste
  • 2 large onions sliced
  • 1 12 inch piece fresh ginger root
  • 1 Tbsp tomato paste
  • 1 tsp turmeric
  • 12 pt yogurt

Directions

  1. Saute the onions garlic and ginger in the shortening until the onion is golden brown
  2. Add the pieces of chicken yogurt tomato paste and the spices
  3. Mix well and fry for about 15 minutes by which time it should become rather dry
  4. Sprinkle in about 2 cups of hot water and allow to cook until chicken is tender
  5. If necessary add more water half way through
  6. Makes about 6 servings
