Pakistani Chicken Curry
Ingredients
- 4 boned chicken breasts
- 3 cloves garlic
- 6 Tbsp butter or vegetable shortening
- 1 Tbsp ground coriander
- 1 tsp ground cumin
- salt to taste
- 2 large onions sliced
- 1 12 inch piece fresh ginger root
- 1 Tbsp tomato paste
- 1 tsp turmeric
- 12 pt yogurt
Directions
- Saute the onions garlic and ginger in the shortening until the onion is golden brown
- Add the pieces of chicken yogurt tomato paste and the spices
- Mix well and fry for about 15 minutes by which time it should become rather dry
- Sprinkle in about 2 cups of hot water and allow to cook until chicken is tender
- If necessary add more water half way through
- Makes about 6 servings
