Pan Toasted Fish

Ingredients

  • 1 lb fish fillet
  • 12 c skim milk
  • 1 egg white
  • 1 Tbsp lemon juice
  • 12 c oat bran
  • 12 tsp paprika
  • 18 tsp black pepper
  • 1 Tbsp vegetable oil

Directions

  1. Place fish in shallow baking dish and cover with milk Refrigerate 1 hour
  2. Drain and pat dry
  3. Combine egg white and lemon juice in a separate shallow dish and set aside
  4. Combine oat bran paprika and black pepper
  5. Dip fillets in egg mixture then oat mixture
  6. Saut in oil in nonstick skillet 3 minutes on each side or until evenly browned
  7. Serves 4
