Ingredients

  • 1 c sugar
  • 5 14 oz margarine
  • 1 jigger pisco or cognac
  • 12 c candied fruit
  • rind of 1 orange
  • 1 Tbsp whole anise
  • 4 c or more flour
  • 3 eggs
  • 12 c seedless raisins
  • 1 Tbsp azahar water or 1 tsp orange extract
  • 2 oz caked yeast
  • 1 c milk

Directions

  1. Place the yeast in 34 cup warm milk let rest 3 to 4 hours Beat the egg whites with the sugar
  2. until it forms peaks
  3. Add the pisco and the orange extract set aside
  4. Add the yeast into a big bowl
  5. Add the rest of the warm milk the melted butter the egg yolks the grated rind and the anise
  6. Slowly add 34 of the flour and the egg white mixture
  7. Beat until smooth
  8. Set aside in a warm space until the next day
