ParaleeS Zucchini Bread
Ingredients
- 3 egg yolks
- 1 c Mazola oil
- 2 c sugar
- 2 c grated zucchini
- 2 tsp vanilla
- 3 c flour
- 1 tsp soda
- 12 tsp baking powder
- 1 tsp salt
- 1 tsp cinnamon
- 1 c chopped nuts
- 3 beaten egg whites
Directions
- Beat the egg yolks
- Add the oil sugar zucchini and vanilla Mix well then add the flour soda baking powder salt and cinnamon
- Stir in the nuts
- At last fold in the beaten egg whites
- Spoon gently into 2 greased and floured loaf pans
- Bake at 325 for 1 hour
- Cool slightly
- Turn out of pans cool on a rack
