Parslied Potatoes

Ingredients

  • 1 12 lb red potatoes scrubbed
  • 1 Tbsp oil
  • 1 onion chopped
  • 1 clove garlic or 14 tsp garlic powder
  • 1 c chicken broth or stock
  • 1 c fresh chopped parsley divided
  • 12 tsp pepper

Directions

  1. Peel a strip of skin off of potatoes in the middle
  2. Place potatoes in cold water
  3. Heat large skillet over medium-high heat Add oil
  4. Saut onion and garlic for approximately 5 minutes Add broth and 34 cup parsley bring to a boil
  5. Place potatoes one layer in skillet
  6. Return to boil
  7. Reduce heat
  8. Simmer covered for 10 minutes or until potatoes are tender Remove potatoes with slotted spoon to a serving bowl
  9. Add pepper to skillet mixture stir
  10. Pour over potatoes
  11. Sprinkle with remaining parsley
