Parslied Potatoes
Ingredients
- 1 12 lb red potatoes scrubbed
- 1 Tbsp oil
- 1 onion chopped
- 1 clove garlic or 14 tsp garlic powder
- 1 c chicken broth or stock
- 1 c fresh chopped parsley divided
- 12 tsp pepper
Directions
- Peel a strip of skin off of potatoes in the middle
- Place potatoes in cold water
- Heat large skillet over medium-high heat Add oil
- Saut onion and garlic for approximately 5 minutes Add broth and 34 cup parsley bring to a boil
- Place potatoes one layer in skillet
- Return to boil
- Reduce heat
- Simmer covered for 10 minutes or until potatoes are tender Remove potatoes with slotted spoon to a serving bowl
- Add pepper to skillet mixture stir
- Pour over potatoes
- Sprinkle with remaining parsley
