Parsnip Pie

Ingredients

  • 5 c parsnip peeled and thinly sliced
  • 1 c leeks sliced
  • 3 Tbsp olive oil
  • 1 12 c extra good Parmesan cheese grated
  • 12 c onions minced
  • 3 to 4 cloves garlic
  • 1 prepared vegetable shortening pie crust

Directions

  1. Saute parsnips leeks onions and garlic in olive oil over medium heat do not allow this mixture to brown
  2. You can mix a little butter with your olive oil if you like
  3. Layer mixture alternately with Parmesan cheese into crust
  4. Some times we mix in some sauteed spinach as well
  5. Season to taste
  6. Bake at 350 for 45 minutes
  7. Top with sliced tomatoes
  8. Serves 6 to 8
