Parsnip Pie
Ingredients
- 5 c parsnip peeled and thinly sliced
- 1 c leeks sliced
- 3 Tbsp olive oil
- 1 12 c extra good Parmesan cheese grated
- 12 c onions minced
- 3 to 4 cloves garlic
- 1 prepared vegetable shortening pie crust
Directions
- Saute parsnips leeks onions and garlic in olive oil over medium heat do not allow this mixture to brown
- You can mix a little butter with your olive oil if you like
- Layer mixture alternately with Parmesan cheese into crust
- Some times we mix in some sauteed spinach as well
- Season to taste
- Bake at 350 for 45 minutes
- Top with sliced tomatoes
- Serves 6 to 8
