Party Mints
Ingredients
- 12 c unsalted butter softened
- 1 1 lb pkg powdered sugar sifted
- 2 to 3 drops oil of peppermint
- paste food coloring
- 1 c sugar
- 14 tsp salt
- 1 c light brown sugar
- 2 Tbsp light corn syrup
- 12 c evaporated milk
- 2 Tbsp butter
- 1 tsp vanilla extract
- 2 c chopped pecans
Directions
- Combine sugar salt brown sugar syrup and milk in medium saucepan
- Cook over medium heat until temperature reaches 234 on candy thermometer
- Add butter vanilla and pecans
- Stir until thick
- Drop by teaspoonfuls onto waxed paper
- Cool
