Party Potato Skins

Ingredients

  • 8 small baking potatoes
  • vegetable oil
  • garlic salt
  • 2 c 8 oz shredded Cheddar cheese
  • 12 slices bacon cooked and crumbled
  • 2 Tbsp chopped fresh chives divided
  • 2 Tbsp chopped green chiles
  • 1 8 oz container sour cream
  • 12 tsp ground red pepper

Directions

  1. Scrub potatoes and rub skins with oil
  2. Prick each potato several times with a fork
  3. Bake at 400 for 30 to 45 minutes or until done
  4. Allow to cool to touch
  5. Cut top third off each potato
  6. Discard tops
  7. Carefully scoop out pulp leaving about 18-inch thick shells
  8. Pulp can be used for mashed potatoes Fry potato skins in 375 oil for 3 to 4 minutes or until brown Drain on paper towels
  9. Place skins cut side up on ungreased baking sheet
  10. Sprinkle with garlic salt and cheese
  11. Broil 6 inches from heat for 30 seconds or until cheese melts
  12. Top skins with bacon and 1 tablespoon of chives
  13. Press green chiles between paper towels to remove excess moisture
  14. Combine chiles sour cream and red pepper in a small bowl
  15. Stir well
  16. Top with remaining tablespoon of chives
  17. Serve with potato skins
  18. Yields 8 servings
