Passover Muffins

Ingredients

  • 2 tsp sugar
  • 2 tsp salt
  • 1 12 c boiling water
  • 12 c oil
  • 2 c matzo meal
  • 4 eggs

Directions

  1. Dissolve sugar and salt in boiling water
  2. Add oil
  3. Add matzo meal
  4. Cool
  5. Add eggs one at a time
  6. Beat thoroughly after adding each egg
  7. Place in greased muffin pans
  8. Bake at 450 until golden brown
  9. Makes approximately 12 large muffins
