Passover Muffins

Ingredients
- 2 tsp sugar
- 2 tsp salt
- 1 12 c boiling water
- 12 c oil
- 2 c matzo meal
- 4 eggs
Directions
- Dissolve sugar and salt in boiling water
- Add oil
- Add matzo meal
- Cool
- Add eggs one at a time
- Beat thoroughly after adding each egg
- Place in greased muffin pans
- Bake at 450 until golden brown
- Makes approximately 12 large muffins
