Pasta And Ricotta Stuffed Red Peppers

Ingredients

  • 1 onion
  • 2 cloves garlic
  • 4 oz Mozzarella cheese about 1 c grated
  • 2 oz Parmesan cheese about 12 c grated
  • 4 red peppers
  • 4 oz ditalini or small pasta
  • 1 Tbsp olive oil
  • 1 c Ricotta cheese
  • 1 egg
  • salt and pepper

Directions

  1. Chop the onion
  2. Mince the garlic
  3. Grate the Mozzarella and Parmesan
  4. Cut tops off peppers
  5. Remove the seeds and ribs
  6. Cook peppers in a pot of boiling salted water just until soft about 30 minutes
  7. Heat oven to 350
