Pasta And Ricotta Stuffed Red Peppers

Ingredients
- 1 onion
- 2 cloves garlic
- 4 oz Mozzarella cheese about 1 c grated
- 2 oz Parmesan cheese about 12 c grated
- 4 red peppers
- 4 oz ditalini or small pasta
- 1 Tbsp olive oil
- 1 c Ricotta cheese
- 1 egg
- salt and pepper
Directions
- Chop the onion
- Mince the garlic
- Grate the Mozzarella and Parmesan
- Cut tops off peppers
- Remove the seeds and ribs
- Cook peppers in a pot of boiling salted water just until soft about 30 minutes
- Heat oven to 350
