Pasta Marco PoloCold Pasta Salad

Ingredients

  • 1 lb linguine
  • 12 c onion
  • 2 c sliced black olives
  • 2 c pimentos
  • 12 lb roasted pine nuts
  • 1 c parsley chopped
  • 2 c vinaigrette
  • juice of 2 limes
  • salt and pepper to taste
  • 12 c olive oil

Directions

  1. Cook pasta until al dente remove and rinse
  2. Mix with 12 cup olive oil and salt and pepper
  3. Roast pine nuts in oven until brown
  4. Remove
  5. Add onion olives pimentos pine nuts parsley vinaigrette and limes to pasta
  6. Mix well
