Patio Potato Salad

Ingredients

  • 12 c milk
  • 13 c sugar
  • 14 c vinegar
  • 1 egg
  • 4 Tbsp butter or margarine
  • 1 Tbsp cornstarch
  • 34 tsp salt
  • 34 tsp celery seed
  • 14 tsp dry mustard
  • 14 c chopped onion
  • 14 c mayonnaise
  • 7 medium potatoes cooked in jackets peeled diced and chilled about 6 c
  • 3 hard-cooked eggs chopped

Directions

  1. In a medium saucepan combine milk sugar vinegar 1 egg butter cornstarch salt celery seed and dry mustard
  2. Cook and stir over low heat until thickened
  3. Remove from heat blend in onion and mayonnaise
  4. Cool
  5. Combine potatoes and hard-cooked eggs carefully fold in dressing
  6. Chill
  7. Just before serving sprinkle with paprika
  8. Makes 6 to 8 servings
