Patio Potato Salad
Ingredients
- 12 c milk
- 13 c sugar
- 14 c vinegar
- 1 egg
- 4 Tbsp butter or margarine
- 1 Tbsp cornstarch
- 34 tsp salt
- 34 tsp celery seed
- 14 tsp dry mustard
- 14 c chopped onion
- 14 c mayonnaise
- 7 medium potatoes cooked in jackets peeled diced and chilled about 6 c
- 3 hard-cooked eggs chopped
Directions
- In a medium saucepan combine milk sugar vinegar 1 egg butter cornstarch salt celery seed and dry mustard
- Cook and stir over low heat until thickened
- Remove from heat blend in onion and mayonnaise
- Cool
- Combine potatoes and hard-cooked eggs carefully fold in dressing
- Chill
- Just before serving sprinkle with paprika
- Makes 6 to 8 servings
