Pavlova

Ingredients

  • 4 egg whites at room temperature
  • 12 tsp salt
  • 1 c superfine sugar
  • 2 tsp cornstarch
  • 2 tsp cider vinegar
  • 1 12 c heavy cream
  • strawberries
  • chocolate sauce

Directions

  1. Butter and flour baking sheet
  2. Heat oven to 300
  3. Beat whites and salt until soft peaks form
  4. Beat in sugar one tablespoon at a time beating thoroughly after each addition until smooth and glossy
  5. Stir cornstarch and vinegar together in small bowl until smooth
  6. Fold into egg whites until blended
  7. Scoop whites onto center of baking sheet
  8. Spread smoothly forming a circle approximately 8-inch diameter with a slight well in the center Put on center rack in oven
  9. Reduce heat to 250 until outside is firm and tan
  10. Cool on wire rack 15 minutes
  11. Remove from sheet Whip cream with a little sugar
  12. Fill center with berries and cream
  13. Cover with whipped cream and decorate with strawberries Drizzle with chocolate sauce
