Peach Crumble Pie

Ingredients

  • 1 8-inch unbaked pie shell
  • 13 c flour
  • 12 tsp cinnamon
  • 2 12 c sliced juicy peaches about 1 12 lb
  • 34 c sugar
  • 116 tsp salt
  • 14 c butter

Directions

  1. Line pie shell with plain pastry
  2. Trim let rest 10 minutes then flute edge
  3. Do not prick
  4. Combine sugar flour salt and cinnamon
  5. Add butter and work with fingertips until crumbly
  6. Add 12 of this mixture to the peaches
  7. Mix lightly and turn into pie shell
  8. Sprinkle the rest of the crumbly mixture over top of peaches
  9. Bake at 425 for 30 to 35 minutes or until peaches are cooked
  10. Cool 2 or 3 hours on rack before cutting
  11. Serves 5
