Peach Schnapps Ice Cream

Ingredients
- 1 qt half and half
- 1 14 c sugar
- 1 tsp vanilla
- 4 eggs lightly beaten
- 2 c whipping cream
- 3 lb fresh peaches peeled and sliced
- 12 c cognac
- 23 c peach Schnapps
Directions
- Scald half and half Stir in sugar until dissolved Add vanilla and eggs Cook in top of double boiler stirring constantly until mixture coats a spoon
- Chill
- Stir in whipping cream and place in ice cream freezer
