Peanut Butter And Banana CookiesDiabetic
Ingredients
- 14 c butter or margarine
- 12 c mashed ripe banana about 2 medium bananas
- 12 c no-sugar-added natural peanut butter
- 1 egg
- 14 c thawed frozen unsweetened apple juice concentrate
- 1 tsp vanilla
- 1 c all-purpose flour
- 12 tsp baking soda
- 14 tsp salt
- 12 c chopped salted peanuts
- whole peanuts optional
Directions
- Preheat oven to 375
- Beat butter in large bowl until creamy Add banana and peanut butter beat until smooth
- Blend in egg apple juice concentrate and vanilla
- Beat in flour baking soda and salt
- Stir in chopped peanuts
- Drop rounded tablespoonfuls of dough 2 inches apart onto lightly greased cookie sheets
- Top each with one peanut if desired
- Bake for 8 minutes or until set
- Cool completely on wire rack
- Store in tightly covered container
- Makes 2 dozen
