Peanut Butter Loaf

Ingredients
- 1 c plus 2 Tbsp all-purpose flour
- 13 c granulated or firmly packed light or dark brown sugar
- 1 Tbsp double-acting baking powder
- 1 c skim milk
- 13 c less 1 tsp chunky peanut butter
- 14 c margarine
- 1 egg
- 2 tsp vanilla extract

- 3-inch loaf pan with nonstick cooking spray set aside
- On paper plate or sheet of wax paper combine dry

- Preheat oven to 350
- In medium bowl
- using
- a
- wire whisk or fork combine remaining ingredients beating until egg is blended peanut butter and margarine will
- be
- lumpy
- Stir in dry ingredients stirring just until moistened
- Pour into sprayed pan and bake for 45 to 50 minutes until
- loaf
- is
- golden and a cake tester inserted in center comes
- out dry
- Set loaf in pan on wire rack for 5 minutes to cool

- invert
- onto
- rack for 5 minutes to cool slightly
- then

- rack
- Remove
- pan
- and let cool completely
- To serve cut into 12 equal slices
