Pears With Spicy Lime Chile And Peanut Chutney

Ingredients

  • 3 Bosc pears
  • 5 tsp fresh lime juice plus zest from 1 lime
  • 14 tsp crushed red pepper
  • 1 clove garlic minced
  • 1 tsp soy sauce
  • 2 Tbsp brown sugar
  • 14 to 12 c dry-roasted peanuts finely ground
  • 12 sprigs fresh mint

Directions

  1. Cut each pear lengthwise into quarters
  2. Using a melon baller create a well in the center of each quarter
  3. In a small bowl prepare chutney by mixing together the next seven ingredients Spoon chutney into hollowed out section of pear quarters
  4. Add a sprig of mint for garnish
  5. Place on serving tray
