Peas And Rice Casserole

Ingredients
- 14 c chopped onion
- 2 Tbsp chopped fresh parsley
- 14 c butter or margarine melted
- 14 c long-grain rice uncooked
- 2 c water
- 1 10 oz pkg frozen English peas
- 1 tsp salt
- 14 c grated Parmesan cheese
Directions
- Saute onion and parsley in melted butter in a large skillet until tender Add rice and saute 5 minutes stirring frequently Add water bring to boil Cover reduce heat and simmer 15 minutes or until rice is tender and liquid is absorbed
