Peas And Rice Casserole

Ingredients

  • 14 c chopped onion
  • 2 Tbsp chopped fresh parsley
  • 14 c butter or margarine melted
  • 14 c long-grain rice uncooked
  • 2 c water
  • 1 10 oz pkg frozen English peas
  • 1 tsp salt
  • 14 c grated Parmesan cheese

Directions

  1. Saute onion and parsley in melted butter in a large skillet until tender Add rice and saute 5 minutes stirring frequently Add water bring to boil Cover reduce heat and simmer 15 minutes or until rice is tender and liquid is absorbed
