Peasant Potatoes
Ingredients
- 4 Tbsp unsalted butter
- 1 large sweet onion diced
- 2 large cloves garlic chopped
- 1 tsp dried oregano
- 12 lb smoked beef sausage cut into 34 inch slices
- 6 medium potatoes cut into 1-12 to 2 inch pieces
- Salt and pepper to taste
- 2 c sliced Savoy or other cabbage
- 1 c diced or sliced roasted red bell peppers
- 12 c shaved fresh Parmesan cheese
Directions
- In a large skillet over medium heat melt butter
- Add onion and garlic
- Cook and stir 5 minutes or until onion is transparent Stir in oregano and sausage and cook about 5 minutes more
- Stir in potatoes salt and pepper until potatoes are well coated with butter
- Place mixture in slow cooker
- Cover and cook on High 3 to 4 hours or on low for 6 to 8 hours stirring every hour if possible
- During last 30 minutes of cooking add cabbage and peppers
- Sprinkle with Parmesan cheese before serving
- Makes 6 side dish servings or 4 main dish servings
