Pecan Cornbread

Ingredients

  • 1 12 c yellow cornmeal
  • 1 c unbleached flour
  • 14 c sugar
  • 1 Tbsp baking powder
  • 1 tsp salt
  • 1 12 c half and half
  • 34 c butter melted
  • 2 large eggs lightly beaten
  • 12 c chopped pecans

Directions

  1. Combine first 5 ingredients in a large bowl make a well in center of mixture
  2. Set aside
  3. Combine half and half and remaining ingredients
  4. Add to dry ingredients stirring just until moistened
  5. Pour batter into a well-greased loaf pan
  6. Bake at 375 for 45 to 50 minutes or until golden
  7. Remove from pan and serve immediately or cool on a wire rack
