Pecan Shortbread Cookies

Ingredients
- 1 c unsalted butter
- 1 c light brown sugar loosely packed
- 12 tsp vanilla
- pinch of salt
- 2 14 c cake flour sifted
- 12 c pecans finely chopped
Directions
- In a mixing bowl beat together the butter light brown sugar vanilla and salt until light and fluffy
- Stir in the flour and nuts just enough to combine
- Do not overmix or cookies will be tough
- Form the dough into a ball and refrigerate for 30 minutes
