Penne With Tomato Cream Sauce

Ingredients

  • 1 28 oz can Italian plum tomatoes with juice
  • 1 c heavy cream
  • 2 garlic cloves minced
  • 1 12 tsp dried tarragon
  • 1 lb penne
  • 6 Tbsp Parmesan cheese fresh grated
  • 1 lb sausage sweet or hot casings discarded

Directions

  1. Brown sausage meat put aside
  2. In a heavy saucepan combine the tomatoes with juice cream garlic and tarragon bring the liquid to a boil breaking up the tomatoes
  3. Add sausage simmer mixture for 25 to 30 minutes or until sauce is thickened
  4. Cook penne 12 to 15 minutes in boiling water drain well
  5. Toss with tomato sauce
  6. Sprinkle with Parmesan cheese and serve
