Pepper Steak

Ingredients

  • 2 tsp minced garlic
  • 2 Tbsp butter
  • 2 onions
  • 2 green sweet peppers
  • 1 12 lb beef round steak
  • 1 12 c beef broth
  • 2 Tbsp soy sauce
  • 14 c water
  • 2 Tbsp cornstarch
  • 1 Tbsp paprika
  • 3 tomatoes
  • 1 c snow pea pods
  • hot cooked rice

Directions

  1. In large skillet or wok stir-fry the garlic in 1 tablespoon butter for 1 minute
  2. Add sliced onion and sweet pepper stir-fry for about 5 minutes
  3. Remove vegetables with a slotted spoon to a bowl
  4. Add remaining butter to wok and stir-fry thinly sliced round steak 2 to 3 minutes
  5. Return vegetables back to wok and add the broth and soy sauce and bring to boil Stir water and cornstarch together and add to wok
  6. Cook stirring until sauce is bubbly
  7. Cook for 2 minutes more
  8. Add paprika tomato wedges and pea pods
  9. Stir and cook about 30 seconds
  10. Serve over rice
