Persimmon Cookies

Ingredients

  • 1 c. persimmon pulp
  • 1/2 c. shortening
  • 1 c. sugar
  • 1 egg, beaten
  • 2 c. flour
  • 1 c. chopped nuts
  • 1 tsp. cinnamon
  • 1/2 tsp. cloves
  • 1/2 tsp. nutmeg
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1 c. raisins or chocolate chips or butterscotch chips

Directions

  1. Beat persimmon pulp, baking soda and shortening until creamy. Add well beaten egg.
  2. Sift flour and spices, add dry walnuts and raisins.
  3. Drop by teaspoons on greased baking sheets.
  4. Bake at 375° for 12 to 15 minutes.
