Persimmon Cookies

Ingredients
- 1 c. persimmon pulp
- 1/2 c. shortening
- 1 c. sugar
- 1 egg, beaten
- 2 c. flour
- 1 c. chopped nuts
- 1 tsp. cinnamon
- 1/2 tsp. cloves
- 1/2 tsp. nutmeg
- 1/2 tsp. salt
- 1 tsp. baking soda
- 1 c. raisins or chocolate chips or butterscotch chips
Directions
- Beat persimmon pulp, baking soda and shortening until creamy. Add well beaten egg.
- Sift flour and spices, add dry walnuts and raisins.
- Drop by teaspoons on greased baking sheets.
- Bake at 375° for 12 to 15 minutes.
