Pesto Chicken Linguine
Ingredients
- 1 12 c torn fresh spinach
- 12 c snipped parsley
- 14 c chicken broth
- 1 egg yolk
- 2 Tbsp grated Parmesan cheese
- 1 tsp dried basil crushed
- 1 clove garlic
- 1 Tbsp cooking oil
- 2 whole medium chicken breasts skinned halved lengthwise boned and cut into julienne strips
- 2 medium tomatoes peeled seeded and chopped
- 4 oz linguine or spaghetti
Directions
- For pesto sauce in blender or food processor container combine spinach parsley chicken broth egg yolk Parmesan cheese basil and garlic
- Cover and blend until mixture is pureed
- Cook pasta according to package directions drain
- Keep hot
