Pheasant Flamed With Apples

Ingredients
- salt and black pepper
- 2 pheasants dressed
- 4 Tbsp butter
- 6 small tart apples
- 6 slices heavy white bread with crusts removed
- 6 tsp grape jam
- 12 c calvados or applejack
- 12 c heavy cream
- 12 c sour cream room temperature
Directions
- Salt and pepper pheasants inside and out then put 1 tablespoon butter inside each cavity
- Place in roasting pan with 34 cup water
- Roast in preheated 350 oven for 1 hour
