Pheasant Flamed With Apples

Ingredients

  • salt and black pepper
  • 2 pheasants dressed
  • 4 Tbsp butter
  • 6 small tart apples
  • 6 slices heavy white bread with crusts removed
  • 6 tsp grape jam
  • 12 c calvados or applejack
  • 12 c heavy cream
  • 12 c sour cream room temperature

Directions

  1. Salt and pepper pheasants inside and out then put 1 tablespoon butter inside each cavity
  2. Place in roasting pan with 34 cup water
  3. Roast in preheated 350 oven for 1 hour
