Pickled Cabbage

Ingredients

  • 1 head cabbage
  • 1 bay leaf
  • 1 Tbsp sugar
  • 1 Tbsp salt
  • 2 c water
  • 1 c vinegar
  • 6 peppercorns
  • 12 tsp allspice

Directions

  1. Bake cabbage for 1 hour
  2. Remove the charred outer leaves Cut the cabbage into 1-inch wedges with the core attached Simmer the water vinegar and spices for 5 minutes
  3. Pour over the cabbage in a jar and seal
  4. Keep refrigerated
