Pickled Carrots

Ingredients

  • carrots
  • 2 qt vinegar
  • 2 Tbsp whole cloves
  • 2 Tbsp whole allspice
  • 2 qt sugar
  • 3 sticks cinnamon

Directions

  1. Remove skins boil in water until slightly tender
  2. Slice or leave whole
  3. Pour syrup made of vinegar sugar and spices in bag boiling over carrots
  4. Let stand overnight then bring to boil and boil 5 minutes
  5. Remove spices pack carrots into clean jars
  6. Fill to within 12 top of jars with hot spiced syrup
  7. Put on cap seal
  8. Process in water bath for 10 minutes
