Pickled Cukes

Ingredients

  • 7 lb cukes sliced
  • 1 oz alum
  • 3 c lime
  • 1 12 c salt
  • 2 qt vinegar
  • 6 lb sugar
  • 12 box pickling spices

Directions

  1. Soak cukes in lime water overnight cover
  2. Drain and wash 3 times in cold water
  3. Soak 2 hours in salt water
  4. Drain and wash 3 times in cold water
  5. Dissolve alum in warm water
  6. Add enough cold water to cover cukes
  7. Add cukes and bring to a boil
  8. Drain and wash 3 times in cold water
  9. Mix sugar vinegar and spices Add cukes and bring to a boil turn down heat and simmer 30 minutes
  10. Pack in hot jars
  11. Yield 12 pints
