Pickled Daikon Japanese Radish

Ingredients

  • 3 lb sliced Daikon
  • 34 c rice wine vinegar
  • 1 12 c sugar
  • 3 Tbsp Hawaiian rock salt
  • 1 Hawaiian red pepper

Directions

  1. Boil vinegar sugar salt and pepper until sugar melts
  2. Cool mixture and pour over sliced Daikon and let sit 1 hour and refrigerate
