Pickled Garden Relish
Ingredients
- 12 head cauliflower sliced
- 4 carrots cut in julienne strips
- 2 stalks celery sliced
- 1 green bell pepper sliced
- 4 oz roasted red peppers or pimentos drained and sliced
- 12 pkg fresh mushrooms sliced
- 1 bunch scallions sliced
- 3 oz pitted green olives drained
- 34 c red wine vinegar
- 14 c salad or olive oil
- 2 Tbsp sugar
- 1 tsp salt
- 12 tsp dried oregano
- 14 tsp black pepper ground
- 14 c water
Directions
- Combine the vinegar oil and seasonings in a large saucepan stirring to dissolve sugar
- Add all other ingredients toss to coat
- Bring to a boil on high heat reduce to low and simmer covered for 10 to 20 minutes or until cauliflower is crunchy but cooked
- Cool then refrigerate a day before serving stirring several times to marinate all ingredients equally
- Drain just before serving
- Serve cold
