Pickled Mushrooms

Ingredients
- 3 lb small fresh button mushrooms
- 2 large cloves garlic chopped
- 2 onions chopped very fine
- 25 crushed peppercorns
- 2 tsp dried thyme
- 3 lemons juice and rind
- 6 c white wine
- 2 c cider vinegar
- 4 bay leaves
- 2 tsp salt
- 12 c snipped parsley
- 1 c olive oil
Directions
- Cover the mushrooms with water containing 3 tablespoons salt Soak for
- 10
- minutes drain then cover with the marinade containing
- all other ingredients
- Heat to boiling then turn down heat
- and
- simmer for 10 minutes
- Discard the lemon rinds and chill
