Pickled Mushrooms

Ingredients

  • 3 lb small fresh button mushrooms
  • 2 large cloves garlic chopped
  • 2 onions chopped very fine
  • 25 crushed peppercorns
  • 2 tsp dried thyme
  • 3 lemons juice and rind
  • 6 c white wine
  • 2 c cider vinegar
  • 4 bay leaves
  • 2 tsp salt
  • 12 c snipped parsley
  • 1 c olive oil

Directions

  1. Cover the mushrooms with water containing 3 tablespoons salt Soak for
  2. 10
  3. minutes drain then cover with the marinade containing
  4. all other ingredients
  5. Heat to boiling then turn down heat
  6. and
  7. simmer for 10 minutes
  8. Discard the lemon rinds and chill
