Drop peeled peaches into cold salt and vinegar solution 2 tablespoons salt and 2 tablespoons vinegar 1 gallon water immediately to prevent discoloration
Mix sugar and vinegar and hot water add spices tied loosely in cloth bag Boil and skim
Wash peaches in cold water and drain
Drop drained peaches into boiling syrup and cook 5 to 6 minutes
Pack in preheated jars
Cover with boiling spiced vinegar or let stand overnight in syrup then pack in jars
Cover with boiling vinegar
Seal and process 30 minutes in hot water bath at simmering temperature
