Pickled Peaches Or Pears

Ingredients

  • 12 to 16 medium peaches
  • whole cloves
  • 2 c cider vinegar
  • 2 c sugar
  • 6 sticks cinnamon

Directions

  1. Clingstone peaches are the best for making pickles
  2. If clingstones are unavailable use regular peaches quartered
  3. Dip in boiling water and remove skins
  4. Stick each peach with 4 to 6 cloves and drop immediately into a boiling hot syrup made of vinegar sugar and stick cinnamon
  5. Boil slowly until peaches are tender 8 to 10 minutes
  6. Pack into jars
  7. Add hot syrup and seal
  8. Makes 2 quarts
