Pickled Shrimp

Pickled Shrimp

Ingredients

  • 2 lb raw peeled shrimp 41 to 50 count or larger
  • 2 medium white or purple onions sliced into rings
  • 1 c vegetable oil
  • 1 12 c white vinegar
  • 12 c sugar
  • 1 12 tsp salt
  • 1 12 tsp celery seed
  • 4 Tbsp capers with juice

Directions

  1. Place shrimp in boiling salted water
  2. Reduce heat and simmer for 3 to 5 minutes
  3. Shrimp are done when they are pink and tender Drain and rinse with cold water then chill
  4. Make alternate layers of shrimp and onion rings in a sealable container
  5. Mix remaining ingredients and pour over shrimp and onions
  6. Seal and place in refrigerator for 6 hours or more shaking or inverting occasionally
  7. Drain and serve
  8. Makes 6 servings
