Pickled Squash Relish
Ingredients
- 8 c sliced squash
- 4 onions sliced or chopped
- 1 Tbsp mustard seed
- 1 Tbsp celery seed
- 2 bell peppers chopped
- 12 c uniodized salt
- 3 c white vinegar
- 3 c sugar
Directions
- Combine squash peppers onions and salt
- Cover with ice and water soak 3 hours
- Pour off water and rinse
- Mix together vinegar mustard seed sugar and celery seed heat until sugar dissolves
- Add squash pepper and onions boil 3 to 5 minutes Seal in hot jars
- Great over beans and cornbread
