Pie De Kahlua

Ingredients

  • 1 9-in Johnstons graham cracker pie shell baked
  • 4 egg yolks
  • 12 c sugar
  • 2 1 oz sq semi-sweet chocolate
  • 14 c water
  • 1 envelope unflavored gelatin powder
  • 14 c cold water
  • 14 c Kahlua
  • 1 pt whipping cream
  • 2 Tbsp sugar
  • 2 egg whites
  • chopped toasted almonds

Directions

  1. Dot shell with Kahlua and set aside
  2. Slightly beat egg yolks in top of a double boiler
  3. Add 12 cup sugar
  4. Place over simmering water
  5. Cook and stir until sugar is dissolved
  6. Melt chocolate with 14 cup water in a small saucepan
  7. Stir melted chocolate
  8. mixture into egg yolks
  9. Cook and stir until mixture begins to thicken
  10. Soften gelatin in 14 cup cold water
  11. Add to thickened chocolate mixture
  12. Stir well and remove from heat
  13. Add Kahlua
  14. Place pan with mixture in a bowl of ice water to cool In small bowl beat cream with 2 tablespoons sugar until stiff In another small bowl beat egg whites until stiff
  15. When chocolate mixture begins to thicken fold in half of the whipped cream then fold in stiffly beaten egg whites
  16. Refrigerate remaining whipped cream
  17. Turn chocolate mixture into pie shell chill
  18. Top pie with remaining whipped cream and almonds
  19. Makes one 9 inch pie
