Pigs FeetTrotters

Ingredients

  • 12 pigs feet split in half lengthwise
  • 4 bay leaves
  • 2 tsp crushed red pepper flakes
  • 4 large onions thickly sliced
  • 6 stalks celery with leaves cut into chunks
  • 10 to 12 whole black peppercorns
  • 4 c cider vinegar
  • 2 cloves garlic split
  • 3 Tbsp salt
  • 1 Tbsp Tabasco sauce

Directions

  1. Have butcher split the trotters for you
  2. Then scrub each one until super clean
  3. Put the pigs feet and all other ingredients in a large pot and cover with cold water
  4. Cover tightly and bring to a boil over high heat
  5. Reduce heat and simmer slowly 3 to 4 hours or until fork-tender
  6. Be prepared to dine
  7. Serves 10 to 12
