Pina Colada Dip

Ingredients

• 23 c sugar
• 2 Tbsp coconut extract
• 2 eggs
• 1 c pineapple juice
• 1 c whipping cream

Directions

1. Whisk all ingredients together except the whipping cream Cook in the top of a double boiler until boiling and thick stirring constantly
2. Cool in a refrigerator until serving time Just before serving whip 1 cup of whipping cream until fluffy Fold whipped cream into mixture and serve
