Pineanna Nut Cake

Ingredients

  • 3 13 c Softasilk cake flour
  • 2 c sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 1 c vegetable oil
  • 3 eggs slightly beaten
  • 4 medium ripe bananas chopped
  • 1 c chopped pecans
  • 1 12 tsp vanilla
  • 1 8 oz can crushed pineapple with juice

Directions

  1. Heat oven to 350
  2. Grease and flour 3 round cake pans 9 x 1 12-inches Mix flour sugar baking soda salt and cinnamon in large bowl
  3. Add oil and eggs
  4. Stir until all dry ingredients are moistened do not beat
  5. Stir in bananas 1 cup pecans the vanilla and pineapple
  6. Divide batter evenly among pans
  7. Bake 25 to 30 minutes or until toothpick inserted in center comes out clean
  8. Cool 10 minutes remove from pans
  9. Cool completely on wire racks
  10. Fill layer and frost side and top of cake with cream cheese frosting
  11. Sprinkle 12 cup of pecans on top of cake
  12. Cut cake using sharp knife
  13. Refrigerate any remaining cake
