Pineapple-Carrot Bread
Ingredients
- 3 c all-purpose flour
- 2 c sugar
- 1 tsp ground cinnamon
- 1 tsp soda
- 34 tsp salt
- 3 eggs
- 2 c shredded carrots
- 1 c vegetable oil
- 1 8 oz can crushed pineapple drained
- 1 c chopped nuts pecans or walnuts
- 2 tsp vanilla
- 34 c confectioners sugar
- 1 to 2 12 tsp milk
Directions
- In a large bowl combine flour sugar soda salt and cinnamon
- In another bowl beat eggs add carrots oil pineapple nuts and vanilla
- Add dry ingredients and stir until moistened
- Spoon into two greased and floured 8 12 x 4 12 x 2 12-inch loaf pans
- Bake at 350 for 60 to 75 minutes until loaves test done
- Cool for 10 minutes in pans before removing to wire racks
- Cool
- Combine confectioners sugar and milk
- Drizzle over loaves
