Pineapple-Coconut Squares

Ingredients

  • 12 c soft butter or margarine
  • 34 c sugar
  • 1 14 c all-purpose flour
  • 1 large can crushed pineapple drained
  • 1 egg well beaten
  • 1 Tbsp margarine melted
  • 12 tsp vanilla
  • 1 can coconut

Directions

  1. Preheat oven to 350
  2. In bowl at medium speed cream the butter with 14 cup sugar
  3. Beat in flour to form a soft dough Press dough evenly on bottom of casserole and 12 inch up sides Bake until brown about 15 minutes let cool
  4. Spread pineapple over crust
  5. Add remaining 12 cup sugar to egg
  6. Add melted butter vanilla and coconut
  7. Spread mixture over pineapple
  8. Bake at 350 for 20 minutes or until brown
  9. When cool cut into squares
