Pineapple-Coconut Squares
Ingredients
- 12 c soft butter or margarine
- 34 c sugar
- 1 14 c all-purpose flour
- 1 large can crushed pineapple drained
- 1 egg well beaten
- 1 Tbsp margarine melted
- 12 tsp vanilla
- 1 can coconut
Directions
- Preheat oven to 350
- In bowl at medium speed cream the butter with 14 cup sugar
- Beat in flour to form a soft dough Press dough evenly on bottom of casserole and 12 inch up sides Bake until brown about 15 minutes let cool
- Spread pineapple over crust
- Add remaining 12 cup sugar to egg
- Add melted butter vanilla and coconut
- Spread mixture over pineapple
- Bake at 350 for 20 minutes or until brown
- When cool cut into squares
