Pineapple Carrot Bread

Ingredients

  • 2 c sugar
  • 2 c all-purpose flour
  • 1 tsp soda
  • 1 tsp salt
  • 1 12 tsp ground cinnamon
  • 3 eggs beaten
  • 1 c vegetable oil
  • 1 c grated carrots or I use canned carrots
  • 1 8 oz can crushed pineapple undrained

Directions

  1. Combine flour salt soda and cinnamon set aside
  2. Combine eggs sugar and oil in mixing bowl
  3. Mix well
  4. Stir in carrots and pineapple
  5. Add dry ingredients and mix well
  6. Pour batter into 2 greased 9 x 5 x 3-inch loaf pans
  7. Bake at 325 for 1 hour or until done
  8. Yields 2 loaves or makes 5 miniature loaves
