Pineapple Carrot Bread
Ingredients
- 2 c sugar
- 2 c all-purpose flour
- 1 tsp soda
- 1 tsp salt
- 1 12 tsp ground cinnamon
- 3 eggs beaten
- 1 c vegetable oil
- 1 c grated carrots or I use canned carrots
- 1 8 oz can crushed pineapple undrained
Directions
- Combine flour salt soda and cinnamon set aside
- Combine eggs sugar and oil in mixing bowl
- Mix well
- Stir in carrots and pineapple
- Add dry ingredients and mix well
- Pour batter into 2 greased 9 x 5 x 3-inch loaf pans
- Bake at 325 for 1 hour or until done
- Yields 2 loaves or makes 5 miniature loaves
