Pineapple Carrot Cake
Ingredients
- 2 c sifted flour
- 1 12 c sugar
- 2 tsp soda
- 1 tsp cinnamon
- 1 tsp nutmeg
- 12 tsp salt
- 3 eggs
- 12 c oil
- 34 c buttermilk
- 2 tsp vanilla
- 1 8 12 oz can crushed pineapple drained
- 2 c shredded carrots
- 1 c chopped nuts
- 1 c flaked coconut
Directions
- Sift dry ingredients into bowl
- Beat eggs oil buttermilk and vanilla add to dry ingredients
- Blend well
- Add the rest of ingredients
- Bake in greased and floured 9 x 13-inch pan at 350 for 45 minutes
- Remove from oven
- With fork poke holes in top to cover surface
- Immediately spread with hot Buttermilk Glaze or Cream Cheese Frosting
