Pineapple Carrot Cake

Ingredients

  • 2 c sifted flour
  • 1 12 c sugar
  • 2 tsp soda
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 12 tsp salt
  • 3 eggs
  • 12 c oil
  • 34 c buttermilk
  • 2 tsp vanilla
  • 1 8 12 oz can crushed pineapple drained
  • 2 c shredded carrots
  • 1 c chopped nuts
  • 1 c flaked coconut

Directions

  1. Sift dry ingredients into bowl
  2. Beat eggs oil buttermilk and vanilla add to dry ingredients
  3. Blend well
  4. Add the rest of ingredients
  5. Bake in greased and floured 9 x 13-inch pan at 350 for 45 minutes
  6. Remove from oven
  7. With fork poke holes in top to cover surface
  8. Immediately spread with hot Buttermilk Glaze or Cream Cheese Frosting
