Pineapple Cream Cheese Pie

Ingredients

  • 1 unbaked 9-inch pie shell
  • 13 c sugar
  • 1 Tbsp cornstarch
  • 1 9 oz can crushed pineapple and juice
  • 1 8 oz pkg cream cheese softened
  • 12 c sugar
  • 12 tsp salt
  • 2 eggs
  • 12 c milk
  • 12 tsp vanilla
  • nutmeg optional
  • chopped pecans optional

Directions

  1. Blend 13 cup sugar with cornstarch
  2. Add pineapple
  3. Cook stirring constantly until mixture is thick and clear
  4. Cool Blend cream cheese with salt and 12 cup sugar add eggs one at a time stirring well after each addition
  5. Blend in milk and vanilla
  6. Spread cooled pineapple mixture over pie shell
  7. Pour cream cheese mixture on top
  8. Sprinkle with nutmeg or chopped pecans
  9. Bake at 400 for 10 minutes
  10. Reduce heat to 325 and continue baking for 50 minutes
